Pear strudel with vanilla protein pudding
Looking out the windows, autumn is already making its presence known... And so it's time for some autumn goodness! How about a pear strudel with protein pudding?
What you'll need
Dough:
- 150g rye flour
- 1 egg yolk
- 100g protein vanilla pudding*
- a little baking powder
Filling:
- pear
- cinnamon
- vanilla sugar
- a little coconut oil
Procedure
Put the ingredients in a food processor and let it process the dough. You can also use regular white yoghurt instead of custard, but then you will probably need to sweeten the dough as well. Next, prepare the filling - coarsely grated pear, cinnamon and vanilla sugar. Feel free to add raisins, nuts, or other dried fruit. For a more "itness variant" instead of vanilla sugar you can sweeten with honey, vanilla protein or flavdrops.

Transfer the dough to a floured rolling pin and roll out into a pancake. Spread the prepared filling in the center and wrap the dough so that the filling doesn't peek out anywhere. Brush the prepared strudel with melted coconut oil. You can also top it with ground nuts or sliced almonds.
Hurray for the oven, 180°C for about 25 - 30 minutes. Watch the dough so it doesn't burn!
The whole kitchen smells of vanilla and cinnamon, the loaf is beautifully soft thanks to the custard dough and sweet enough thanks to the pear filling.
