Boiled vs. raw eggs - Which type is better?
I still get questions about whether it is better to eat raw or boiled eggs. The answer is clear.
One study looked at how much protein was absorbed from boiled versus raw eggs. It found that subjects absorbed 90% of the protein from boiled eggs, compared to only 50% of the protein from raw eggs (PMID = 9772141).
Another study provided healthy subjects with a meal that contained cooked or raw egg protein. This study reported that 94% of cooked egg protein was absorbed compared to only 74% of raw egg protein (PMID = 10564098)
The result seems pretty clear. Cooking eggs helps the protein become more digestible and available to our bodies. Eating raw eggs also carries the risk of bacterial contamination and food poisoning (PMID = 10706440; PMID = 8158026).
Boiled vs. raw eggs - which type is better?
The average egg (white + yolk) contains about 6 grams of protein. 3.5 grams (about 60%) are found in the egg white and 2.5 grams (about 40%) are found in the egg yolk.
Interesting fact
Eating eggs for breakfast has been shown to cause people (compared to other types of breakfasts) to eat significantly less for the next 24 hours without actively restricting calories.
Conclusion
I'm a big egg lover and I'm looking forward to the end of the diet when I'll include them again in abundance. My favourite modification of them is to see the picture below. Eggs are a great nutritious food. Always cook eggs any way you like. I like to include them in menus just for breakfast and now you know why.
