Two-colour cheesecake
Here's another recipe, this time for two-colour cheesecake
Ingredients:
- 60g finely ground oatmeal
- Amix Whey Pure Fusion protein (I used the cookie flavour)
- coconut oil
- 250g soft cottage cheese
- 15g shredded coconut
- 1 egg
- cocoa/carob
- raspberries (or other fruit to taste)
- or other sweetener
Procedure:
Mix the flakes with 10g of protein, pour hot water and let soak. Then add about a teaspoon of coconut oil. You can also add a teaspoon of white yoghurt for a better "dough" connection. Spread it on the bottom of a baking tray lined with baking paper and pre-bake the shell in a preheated oven at 180°C for 5-10 minutes.
For the filling, mix together the cottage cheese, coconut, a scoop of protein powder, egg and additional sweetener to taste. Divide the filling in two and add the cocoa/cocoa nibs to one.
Spread the light, then the dark (the order is up to you) curd part on the pre-baked crust and decorate with raspberries.
Bake for another 20-30 minutes (depending on the oven). Enjoy!
