Sweet zucchini? This recipe will blow your mind!

The zucchini season is in full swing. Zucchini, as a low-calorie vegetable similar to cucumber, finds a wide range of uses in the kitchen. You can bake it, stuff it, make it into patties, add it to sauces or even use it as a base for pizza crust. But how about trying incorporating it into something sweet? Our chocolate bread, with zucchini as the main ingredient, will convince you that this vegetable is great in desserts too!

Protein chocolate sandwich with zucchini

Ingredients:

Procedure:

  1. Grate the zucchini coarsely and let the water run off. Ideally leave in a colander and squeeze after 10 minutes.
  2. In the meantime, mix your whole wheat flour with a scoop of protein, ideally some chocolate.
  3. Add the cocoa, cinnamon, coconut sugar* and baking powder, about half a teaspoon.
  4. Beat the two eggs, add the white Greek yogurt and mix.
  5. Add the squeezed zucchini to the batter.
  6. If the batter seems too thick, add a little milk.
  7. Finally, stir in your favorite nuts chopped into smaller pieces. We used 30g of hazelnuts.
  8. Transfer the batter into a baking paper lined loaf tin or other baking tin.
  9. Bake in a preheated oven at 180°C for about 35 minutes.

*Tip: instead of coconut sugar you can use cane sugar, honey or some non-caloric sweetener.
