Arnold busts myths: the truth about white rice and fat gain
Bodybuilding icon and fitness guru Arnold Schwarzenegger is once again busting myths. This time he has addressed one of the most common questions in the world of nutrition: does white rice cause fat gain? In a recent edition of his newsletter , Arnold's Pump Club, Schwarzenegger shared his perspective, backed by historical research, to bring clarity to this controversial debate.
Many people shy away from white rice, thinking it's an "empty" calorie that leads directly to fat storage. However, Arnold points out that the problem is not rice itself, but the overall context of our diet.

Evidence from the past: the rice diet
Schwarzenegger recalled a now almost forgotten 1975 study that examined the so-called "rice diet." This extremely restrictive eating plan consisted mainly of rice, fruit and vegetables. And the results? They were staggering. The group of 106 obese patients who participated in the diet lost a whopping 45 kilograms per person on average.
How is that possible when they were eating "unhealthy" white rice? Schwarzenegger explains that the magic lay in a few key factors:
- Low calorie intake: the diet was naturally very low calorie.
- High satiety.
- Elimination of processed foods: The diet contained no processed foods, no added sugars and no excess salt.
This approach not only led to massive weight loss, but also significant improvements in health indicators such as blood pressure, cholesterol and blood sugar levels. So the bottom line is clear: the problem is not one particular food, but overeating and eating highly processed products.
Why is rice not the enemy?
Arnold goes on to argue that entire cultures where rice is a staple of the diet have historically had much lower rates of obesity than Western countries. This only confirms that the key is the overall dietary pattern and caloric balance, not demonizing one food.
"The problem is not rice. The problem is that you take in more calories than you burn," Schwarzenegger points out.
How to incorporate white rice into your diet?
Although Arnold does not recommend an extreme rice diet, he advises how to consume white rice in a smart way. Instead of eating it on its own or with fatty sauces, combine it with good quality protein (chicken, fish, tofu) and a large portion of vegetables. This will create a balanced meal that will fill you up and give your body the nutrients it needs.
For people with metabolic issues such as diabetes, she recommends limiting salt, prioritizing fruits and vegetables, and minimizing ultra-processed foods.
