They should be stored in a cool place and in summer days it is better to keep them in the fridge. It is not recommended to buy them in stock as they tend to go rancid. It is also a good idea to steam them before cooking to get rid of any bitter taste they may have. After scalding, just boil them for 15 to 20 minutes and let them finish cooking under the lid.
