Product description Wolfberry Coconut flour BIO
Wolfberry coconut flour is made from coconut copra, which is ground into a fine powder after drying and oil extraction. Coconut flour is exceptional in that it contains 39% fibre and 19% protein. It is naturally gluten-free, making it suitable for coeliacs.
Any difference in colour is due to processing variations and does not affect the quality of the product.
In some recipes, for example for pancakes, cakes or Christmas cakes, coconut flour can be completely substituted for conventional flour. When preparing such a batter, it is advisable to add either an extra egg or xanthan gum compared with the original recipe. With xanthan gum, the dough will crumble less and hold its shape better. In addition, the finished products will remain crisp, fresh and dry out more slowly.
While most gluten-free flours are almost tasteless, coconut flour is beautifully fragrant and will, on the other hand, add an interesting "zing" to any dish. Although it is not sweetened in any way, you only need to use less sweetener than regular flour because coconut has a naturally sweet taste. You can mix coconut flour with all kinds of gluten-free flours as well as conventional flours. If you add it to milk or juice, you get a delicious drink full of protein and fibre.
There are lots of recipes for sweet baked goods with coconut flour on the internet, but if you want to experiment and try out the fact that it's also delicious in combination with fish, here's a recipe for paleo tilapia.
