Also known as isomaltulose, palatinose is a modern advanced carbohydrate component of sports nutrition supplements that is one of the best but also one of the most expensive; palatinose is characterized by a low glycemic index (32) and therefore slow breakdown, it is gradually absorbed in the small intestine, its main advantage is that it does not sharply increase blood sugar levels and products based on its content therefore significantly less likely to promote the accumulation of unwanted fat stores. It is a naturally occurring carbohydrate found in honey and molasses. It is a disaccharide which, like sucrose, consists of one molecule of glucose and one molecule of fructose.
