What is A2 milk? Let's GOAT!

A2 milk comes from cows, sheep, goats or buffalo with the A2-A2 genotype. Today it is assumed that all breeds originally carried the A2 genes and that the A1 type or mixed A2-A1 type, which is mostly found in Europe today, was created by breeding or occurred quite randomly. This is why A2 milk is often referred to as indigenous milk. Cow's milk consists of approximately 3,5 % milk protein.

These are mainly caseins, which can be subdivided into alpha (α), beta (β), gamma (γ) and kappa (κ) caseins. A2 milk is milk which has a particular form of β-casein in its protein content, called A2 β-casein, instead of the more common A1 form of β-casein. The A1 form and the A2 form of casein differ only slightly from each other at position 67 of the amino acid chain. The amino acid histidine is present in the A1 β-casein form and the amino acid proline in the A2 form.

The difference is more significant for the final consumer. The structure of A2 protein is more comparable to human breast milk, as well as to milk from goats, sheep and buffalo. Many people therefore find A2 milk easier to digest. Even people with lactose intolerance from time to time report that A2 milk is easier to digest. However, this has not yet been fully scientifically proven.

Goat's milk, from which I Love Goat Protein is made, contains a high proportion of A2 casein. It also has a higher proportion of short- and medium-chain amino acids. The higher proportion of beta-casein in goat's milk is therefore similar to that in human breast milk.
