Rice flour is made from rice using a special process. It is mainly used to prepare sweet, unbaked desserts. It is an excellent raw material for baking gluten-free cookies, cakes and unleavened buns. Or suitable for thickening sauces in savoury or sweet dishes. Rice flour increases the volume and binding power of (gluten-free) mixtures.

It is also usually mixed with other flours (buckwheat, corn, etc.) in baking. Rice flour dough is firm, similar in many ways to wheat flour dough, although not as elastic.

It is an easily digestible food which gives a feeling of satiety. It is gluten-free and therefore suitable for patients with coeliac disease and for gluten-free diets.
