Steens Manuka Honey is raw unpasteurized real manuka honey from New Zealand. It comes from bees pollinating the Balmina metlata, a shrub with white-pink flowers native to Australia and New Zealand, where the indigenous Maori tribes gave it the name Manuka. Manuka flower honey has an exceptional nutritional profile - it contains a full spectrum of enzymes, amino acids, antioxidants, vitamins, minerals and other substances with very interesting properties. Manuka honey is also known to be more flavorful, rich and full-bodied than other honeys. This is due to the very high concentration of active ingredients.

The uniqueness of New Zealand Manuka
New Zealand Manuka has been proven through testing to contain remarkable natural compounds that set it apart from any other honey in the world. Steens Manuka honey is tested for authenticity to strict New Zealand government standards and for purity to UMF and MGO standards. It is unique because of its unique content of active ingredients and also because of the difficulty of sourcing it. Manuka itself only flowers very briefly during the summer months and only when conditions are favourable. What makes pollination of Manuka shrubs even more difficult is the fact that Manuka flowers are only open for about twelve days. If you don't get a hit within that time, you simply don't have Manuka. The last fact that makes harvesting difficult is the remoteness of the hives themselves.

Whole CombTM technology
Whole CombTM technology is used in the production of genuine Manuka honey. The common process known as 'prick and spin', where each honeycomb cell is pierced and then the honey is pushed out by centrifugal means, leaves a large amount of nutrients in the honeycomb - pollen and bee bread. The Whole CombTM technology separates the entire contents of the honeycomb, including the bee bread and pollen. Then only the beeswax and impurities are gently filtered out (at temperatures not exceeding the natural temperature of the hive).

Bee bread, nature's fermented treasure
Bee bread is a hugely valuable source of nutrients and probably one of the oldest dietary supplements for humans. It is the content of this ingredient and the pollen, combined with the source material - nectar from Manuka flowers - that makes for a unique and unrepeatable honey.

Bee bread is fermented pollen intended as food for the hive. The bees mix the pollen obtained (in this case from Manuka) with honey or nectar and their own saliva. The resulting mixture is placed in small compartments in the hive, waxed, and then naturally fermented due to its natural bioculture content. The bees themselves thus produce their own fermented complex food! Bee bread contains all the vitamins, more than twenty amino acids, more than twenty minerals, enzymes, biocultures and almost a hundred other substances (natural phenolic compounds,...) contained in the pollen. And all this in its natural form, thanks to fermentation, with excellent bioavailability. Bee bread has about three times higher bioavailability than plant or bee pollen. According to myth, the ancient Greek gods consumed it together with nectar - they called it ambrosia.

UMF, MGO and MPI certificate
Manuka Steens® are divided into three strict ranges according to criteria:

MPI Manuka (MPI = Ministry for Primary Industries) = New Zealand government certification for honeys that can be described as manuka, i.e. guaranteed to contain sufficient levels of the five active ingredients: manuka pollen, phenylacetic acid, hydrophenylacetic acid, mehoxybenzoic acid and methoxyacetophenone. Honey which does not contain these substances in sufficient quantities cannot be passed off as manuka honey at all.

MGO (methylglyoxal) = attribute indicating the amount of methylglyoxal present. Only some honeys that also meet the criteria for MPI certification contain this substance in the required quantity. It is therefore an even higher category with much more distinctive properties.

UMF (Unique Manuka Factor) = a comprehensive certificate assessing Manuka which, in addition to the MGO characteristic, also includes the leptosperine content (it can be used to determine whether the honey is from New Zealand Manuka only), the dihydroxyacetone content, which is converted to methylglyoxal (a precursor) and the hydroxymethylfurfural content, which shows that the honey has not been overheated. The sum of all these four characteristics is only achievable with monofloral Manuka, i.e. Manuka honey coming only from Manuka and not from other plants. This is the highest category of honey with the strongest properties and the highest content of active ingredients.
