Cocoa is made from the seeds of the cocoa tree and is the basic ingredient for chocolate. It has a distinctive bitter taste and is mainly grown in West Africa. However, it originated in South America, where it was introduced to Europe in the 16th century.

A mixture of Trinitario, Forastero Amazónico and Criollo varieties is used in production.
